Homemade Apple Muffins

Their fresh, crisp flavour brings out the best in these delicious apple muffins. For this recipe, we recommend using a tart apple variety like Granny Smith or a sweet one like Gala – both of which work beautifully.

Serves: 12 muffins

Ingredients for your apple muffins:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 1/2 cups diced apples (about 1-2 apples, peeled and cored, preferably Granny Smith or Gala)

Optional Topping:

  • 2 tbsp brown sugar
  • 1/4 tsp ground cinnamon

Instructions for the best apple muffins:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with butter or cooking spray.
  2. Prepare the dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Mix the wet ingredients: In another bowl, whisk together the melted butter, milk, vanilla extract, and egg until well combined.
  4. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix—the batter should be slightly lumpy.
  5. Fold in the apples: Gently fold the diced apples into the batter.
  6. Fill the muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Optional topping: In a small bowl, mix together the brown sugar and cinnamon. Sprinkle this mixture evenly over the tops of the muffins.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  9. Cool and enjoy: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
