- 1 tbsp olive oil
- 6-8 smoked sausages or chorizo (sliced into thick chunks)
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can (400g) diced tomatoes
- 1 can (400g) cannellini or butter beans, drained and rinsed
- 1 tbsp smoked paprika
- 1 tsp dried thyme or fresh thyme sprigs (fresh will taste even better!)
- 1/2 tsp ground cumin
- 2 cups (500ml) chicken or vegetable broth
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: a pinch of chilli flakes (or some fresh chillis) for extra heat
Instructions:
- Prepare the Sausages: In a large, heavy-bottomed pot or casserole dish, heat the olive oil over medium heat. Add the sausage pieces and cook until browned, about 4-5 minutes. Remove and set aside.
- Cook the Vegetables: In the same pot, add the onion and cook until softened about 3-4 minutes. Add the garlic, red, and yellow bell peppers, and cook until they begin to soften, another 3 minutes.
- Season: Add the smoked paprika, thyme, cumin, and chilli flakes if using. Stir well to coat the vegetables with the spices.
- Combine: Pour in the diced tomatoes and broth, and bring to a simmer. Add the beans and browned sausages back into the pot.
- Simmer: Lower the heat and let the stew simmer for 20-25 minutes, allowing the flavours to meld and the sauce to thicken. Taste and season with salt and black pepper as needed.
- Garnish and Serve: Remove from heat, garnish with chopped fresh parsley, and serve warm with crusty bread or rice.
