Ingredients:
- 200g (1 cup) unsalted butter, softened
- 200g (1 cup) caster sugar
- 1 large egg
- 400g (3 1/4 cups) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground mixed spice
- Zest of 1 lemon
- 50g (1/3 cup) dry currants or sultanas
- Icing sugar for dusting (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.
- Cream the Butter and Sugar: In a large bowl, cream together the softened butter and caster sugar until light and fluffy.
- Add Egg and Mix: Beat in the egg until well combined.
- Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and ground mixed spice.

- Bake: Place the biscuits on the prepared baking sheets and bake in the preheated oven for 10-12 minutes or until lightly golden.
- Cool: Allow the biscuits to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Optional Icing: Once cooled, you can dust the biscuits with icing sugar for a finishing touch.
