Traditional English Easter Biscuits Recipe

Easter Biscuits

Ingredients:

  • 200g (1 cup) unsalted butter, softened
  • 200g (1 cup) caster sugar
  • 1 large egg
  • 400g (3 1/4 cups) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground mixed spice
  • Zest of 1 lemon
  • 50g (1/3 cup) dry currants or sultanas
  • Icing sugar for dusting (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.
  2. Cream the Butter and Sugar: In a large bowl, cream together the softened butter and caster sugar until light and fluffy.
  3. Add Egg and Mix: Beat in the egg until well combined.
  4. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and ground mixed spice.
  5. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Add the lemon zest and currants/sultanas and mix until evenly distributed.
  6. Roll and Cut: Roll out the dough on a floured surface to about 5mm thickness. Use Easter-themed cookie cutters to cut out shapes.
  7. Bake: Place the biscuits on the prepared baking sheets and bake in the preheated oven for 10-12 minutes or until lightly golden.
  8. Cool: Allow the biscuits to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. Optional Icing: Once cooled, you can dust the biscuits with icing sugar for a finishing touch.
